Roasted Peaches (with vanilla, schnapps, spice, and honey)

Peach season in Canada is my favourite. With all the delightful fruit coming out of the Okanagan, I find myself looking for any excuse to eat more peaches. This is a simple, yet sophisticated way to make a lovely dessert with peaches as the main star!

Pairs seamlessly with the Créme Brûlée Chandler Honey. 

Ingredients:

  • 3 tablespoons Créme Brûlée Chandler Honey
  • 4-5 ripe peaches with stones removed
  • 2 cinnamon sticks
  • 2 star anise
  • 1 vanilla bean, cut open
  • splash of peach schnapps or other sweet liqueur 
  • 1 cup plain yogurt (or ice cream if preferred)

Directions:

Preheat your oven to 375 degrees F

Cut peaches in half and remove the stones, then cut into smaller bite sizes peach chunks. 

Arrange peaches on a baking sheet, adding spices and the vanilla bean. 

Drizzle Créme Brûlée Chandler Honey generously, and finish with a splash of peach schnapps. 

Bake the peaches for 10-15 minutes until they are slightly caramelized. Remove from oven and serve over yogurt or ice cream of your choice. Enjoy!
